Ellis lettered in football and track and field three times while at Neville High School in Louisiana. He finished third in the state of Louisiana in shot put as a junior. Ellis was considered a two-star offensive lineman according to Rivals.com, and decided to attend Louisiana Tech over Louisiana Monroe.
Ellis redshirted upon entering college. He broke a bone in his left foot and played in only four games as a freshman. He was the starting nose tackle in 2011 and recorded 29 tackles on the year with 3.5 tackles for loss. He was named a Second-Team All-WAC. Ellis tallied 21 tackles in nine games (two starts) in 2012. Ellis had his best season as a senior with 48 tackles, 5.5 tackles for loss and 1.5 sacks on his way to being named a C-USA Honorable Mention.
Ellis measured 6-foot-1, 334 pounds, with over 10-inch hands at the Combine. He ran a 5.27 40 yard dash, but improved that to 5.03-seconds at his Pro Day. He benched 225 pounds, 25 times. The Oakland Raiders selected Ellis with the No. 7 pick in the fourth round (No. 107 overall).
